Video recipe: Walnut-crusted fish

IT’S sometimes hard to get inspired about choosing the healthier option, but Nico’s amazingly satisfying walnut-crusted white fish is guaranteed to hit the spot. We all know we should have more fish in our diet. Packed with Omega 3 and good fats, it really is the smart option. So here is a way to dress up an old favourite and bring the love back for a good piece of barramundi, snapper or blue eye.
Perfect for entertaining or a quick meal any time of the year – just remember: fresh is always best.
Ingredients
4 firm fish fillets (snapper or blue eye is great)
1/3 cup chopped parsley
1 cup walnuts (chopped)
1 tsp Dijon mustard
200g sugar snap peas (topped)
150g snowpea sprouts
100g cherry or grape tomato (halved)
Lemon wedges to serve
Extra virgin olive oil
