Reader recipes: Besta Bruschetta

THIS tasty central Italian appetizer has its roots in the dining traditions of 15th century Tuscany and it’s easy to see why nothing about it has changed. Why mess with a good thing?
Homemade Bruschetta is perfect for adding a touch of style to a relaxed Sunday fry-up or as an easy to throw together appetiser for entertaining. Just make sure you double the recipe because they’ll be gone in a flash!

Ingredients
250g Philadelphia cheese
3 large tomatoes, seeded and chopped
1/2 Spanish onion, finely chopped
1/4 cup finely shredded carrot
1/4 cup basil pesto
2 tbs shredded basil
2 tsp balsamic vinegar
1 fresh breadstick from your local bakery
Combine ingredients and mix well. Serve with a breadstick which has been sliced, sprayed with olive oil and grilled on both sides.
