Orange and yoghurt muffins

WE don’t think that eating well should mean forgoing your favourites, it just means approaching your cooking with a little innovation. Chef Nico’s orange and yoghurt muffins really are the perfect start to a healthy, energised day. Packed with vitamin C and calcium, and with half the fat of a regular muffin, these little beauties have all the satisfaction of a carbohydrate snack with only half the sin.
The recipe also works well with mandarins or other seasonal fruit so get creative. Enjoy!
Ingredients
1 orange (rind grated)
11/2 tablespoons low fat margarine spread
1 tablespoon caster sugar
1 cup self-raising flour, sifted
1 egg, lightly beaten
1 x 200g tub fat-free vanilla yogurt
