Christmas rum balls

RUM balls are a great coconut-coated chocolaty treat, especially at Christmas time. So, if you are entertaining or would like to try them for yourself, why not try this recipe.

Rum ballsIngredients

1 pack of Arnotts Granita biscuits (250g)
1 tin of condensed milk (395g)
1 cup raisins
1 cup Cadbury’s milk chocolate drops
1 cup desiccated coconut
3 tablespoons rum (Bundy preferably) or 3 tsp rum essence or 4 tablespoons Baileys Irish Cream
Extra desiccated coconut for rolling balls in (place in bowl)

Method

  • Crush biscuits until no lumps left. Mix in raisins, choc drops and coconut and mix.
  • Add rum/rum essence and mix well.

  • Pour in half tin of condensed milk, mix until all biscuit coated then pour in remainder of milk. If mixture is too wet/sticky then add extra coconut to balance out.

  • Take a spoonful of the mixture and roll into a ball.  Then coat in extra coconut.

  • Place in airtight container in refrigerator for a couple of hours or until firm.
